Crabapples and Apples

This week we’ve been inundated with Crabapples and Apples. The sweet cloying smell of these tiny fruits ripening in the kitchen kept the yellow jackets and fruit flies bumping against the windows screens.

With so many crabapples, we decided to try out several recipes. And with the aid of a steam juicer, we had an excellent base for jellies and juices. Many people dismiss these little gems as little more than a nuisance, it takes a bit of work, but adding a little sugar or honey to the juice provides an extremely refreshing drink on a hot summer’s day!

We also made up some Crabapple Juice, Apple Juice and Apple Butter. I think we’ve still got about 150 pounds of apples to process. Here’s some of the Crabapples getting spiced.
